Chef Laurie has extensive hands-on experience working at Canyon Ranch – Lenox and Sea Island Resorts in Georgia. She understands the importance of working with the chef and staff to create new menus and recipes as opposed to telling them what to do.
This package focuses on developing a wellness plan for resorts, spas and restaurants including:
- Discussion and pre-planning of “What is needed for your specific business?”
- Up to three days of on-site training with your culinary staff.
- Consultation with your chefs and their staff on the desired cuisine of your property.
- Work with culinary staff to establish ingredients and guidelines for development of recipes for appetizers, soups, sauces, that are high in flavor and low in saturated fat.
- Creation of wellness guidelines for preparation of fish, poultry and meats - including methods of preparation and items to avoid when developing the recipes.
- Work with the pastry chef and their staff on creating low-fat, low-sugar desserts without the use of artificial sweeteners.
- Education of the kitchen staff on preparation of foods to address special requirements such as gluten-free, diabetic and lactose-free diets.
- Nutritional analysis of each dish to note calories, fat, protein, etc. per serving using ESHA professional nutrition analysis software.
- Assistance with creation of needed recipes for all menus (including Room Service).
- Meeting with the service staff to describe the new items on the menus and provide education on the wellness selections.
- Presentation and tasting of the new menu items prepared by the culinary staff.
Fees and Accommodations
- A fee of $5,000 for three day program
- Airfare and accommodations to be provided by property
